ipod software help

so a month or so ago my radio was stolen, i finally bought a deck off of my friend (have you ever tried installing a pioneer deck without the metal keys you use to remove a deck? chyeah) with an auxilliary cable which i connect to my iphone... but it also has an ipod-specific cable running out the back.

i have like five old, battery-dead ipods lying around, and one in particular has a bunch of old music i'd like to keep... but i wanna put new music on it, and iTunes is not down with letting me add music to a non-synced device. anyone have any mac software that would let me do that?
