Yea I've only tried my brothers flow bindings a few times but I think they are more uncomfortable to land with. In deep off pist snow they are great however cus you have more sideway power to bend the board with. So if you have a narrow board and want to ride off pist with it, I'd recommend flows.
Step ins are a good choice if you don't jump or rice offpist. Just see to it that you buy expensive ones as the cheap bindings can be hard to get on. They often ice up in bad places. Also cheap step in shoes are bad for your ankle because they might be too soft. Of that I have personal experience. Broke my ankle two years ago when I was testing my friends board.
