Why do I keep getting mails...

... every time someone replies to a thread in which I've posted? I've already disabled that option in my CP.

The option actually specifies "Use 'Email Notification' by default", which means that it your change will only apply to threads that you post to from now on. It is done this way since you can be notified on a per-thread basis rather than all threads. Threads that you already posted to will still have email notification on.

If you get mail notifying you, go to that thread and edit your post(s). You can turn email notification off on threads when you edit them.

Or use the unsubscribe to all thread link in one of the e-mails, that's alot less trouble.
