It's weird, even though RPGs are my favorite genre, I almost never finish them. At least not around the same time I play through the first 90% of the game. I get so bored with battles. I'll talk about ones that were good for a while.

Earthbound- A parody of the entire RPG world. Much fun. Very much a Nintendo offering. Meaning it's aimed at kids. Made it up to the final world before I got bored. (The boss battle is actually really fun, it's just the walk to get there that sucks)
Chrono Trigger- Fun, time travel, lots of endings. I'd get bored towards the end of every segment, but then it'd perk up again.
Tales of Phantasia (okay, Super Famicon) - Nonstandard battle system. Lots of spells and items and decent number of side quests. Excellent graphics for it's time. Got boring at about 70%
Illusion of Gaia/Terranigma - Illusion of Gaia is the only game that never ever bored me. It definately never achieved the highs of the other games, but it was consistantly above average. Terranigma was either the prequel or the sequel, I forget which. I made it right up to about the final boss battle before I got bored. It's overall better than Illusion of Gaia, but the ending to both suck.
Shadowrun - (both SNES and Genesis). Different games both set in the shadowrun world. Imagine Gibson's Sprawl. That's these games. Fun, but level building sucks

Albion- An inventive and original RPG in space! Once you get used to the crappy 3d walkabouts, it's quite enjoyable.
Fallout 1 & 2. Amazing. SIMPLY amazing. Very awesome. Keep me right up until the boss.
I'm hard pressed to remember PC rpgs that I like, but I'm sure there are more.
