I listen to lots of cover songs, but I hesitate when asked if any are better than the originals. The problem is that, with most covers, the original is either a very popular classic or so horribly bad that the cover is almost a way to make fun of them.
I like a lot of punk covers, like almost anything by Me First and the Gimme Gimmes. I especially like their versions of the "Phantom of the Opera" and "Don'T Cry For Me Argentina" from their showtunes album, and Bob Dylan's "Blowing In the Wind". MXPX has an excellent take on "Take On Me". Also worth a listen is Lagwagon's cover of the theme from Cheers, and Yellowcard's cover of Michelle Branch's "Everywhere". I also like Zebrahead's cover of the Spice Girls' "Wannabe".
I also like to listen to a lot of a cappella choir groups covering pop songs. The Brown Derbies and U. Penn's Off the Beat do a lot of really interesting covers. My favourite a cappella covers are: Mixed Company's cover of TLC's "Unpretty", the Brown Derbies' cover of "I'll Be There For You" (AKA the Friends theme), and Off the Beat's cover of U2's "I Still Haven't Found What I'm Looking For".
More mainstream cover songs I like are Chantal Kreviazuk's version of "Leaving On a Jet Plane" from the Armageddon soundtrack, and the Counting Crows' version of "Big Yellow Taxi" featuring Vanessa Carlton.
My absolute favourite cover song though is Travis' cover of Britney Spears' "Hit Me Baby One More Time", mainly just to hear them trying not to crack up in the middle of playing it, but also because it usually takes a while before people realize what they are playing.
