The only one I know about Gainax is Evangelion, which was HUGE a few years back, sadly I missed it

If you're talking about series, I loved the following:

GTO (This is one of the funniest I've ever seen, but I nor did a lot of people liked the ending
Hikaru no Go (This had a shocking ending, everyone thought this was it, but now the new and exciting story continues from the point it left off)
Detective Conan (This one never finishes...Nor did I continued following)
Our Soccer Field(This is Chinese translation, I have no idea what the Japanese name is, but this is my favorite "sport" genre comic series)
Yuyu Hakusho (This is as good as Dragonball, in my opinion, had a better ending too, unlike DB, which extended as long as possible)
HunterxHunter (Don't know if this is finished yet, cuz I stopped all comic reading, it costs too much to buy them all, ya know.. )
Yakuza Side Story (This story is excellent, too bad there weren't a lot of fans in HK)

There are more classics I loved when I was younger, but these are the more recent ones (Around the past 10 years?)

NGE is probably one of the best anime's ever created..
Mahoromatic and Kareshi Kanojo no Jijou (aka kare kano) are also really good series by Gainax..

the music for these movies aren't bad either.
"The Legend of Ashitaka" theme for Mononoke is very good. DL it on Kazaa to find out.
Castle in the Sky has a great opening theme as well.
