Not their Independence, that is September 15th.
I demand everyone go back to school.
Damn, you beat me to it.
Seriously though, who hasn't beaten the French?

If I could add to that...
Sept 15 & 16 celebrates the victory over Spain's long colonial rule in Mexico. Cinco De Mayo celebrates their victory over the French in 1862, who attempted to aquire Mexico as their territory on the pretense that Mexico owed them so much money from their struggle for independence from Spain back in 1821.
Mexico has had a long history of political turmoil, both in domestic revolt, and foreign attack. They have been subject to invasion from Spain, the United States, and the French all within the span of the last 180 years, so that helps to explain why their political system is so unstable, even to this day.
Just wanted to give you a little bit of historical context to ponder with your Corona and nachos.
