Breakfast Pizza
1. Frozen pizza base
1. Can of baked beans
2. Eggs
3. Rashes of bacon
1. Onion
1. Cheese, (something strong flavoured, like a Pecorino)
1. Anything else you want (black pudding would be good)
- Precook the bacon under grill/broiler.
- Spread can of baked beans over pizza base.
- Lightly scramble the eggs, then pour over beans
- Place grilled bacon and onion on top, then cheese.

Thai Coconut Prawns with Baked Crayfish and Baby Spinach CousCous
Baked Crayfish recipe is a few posts up.
Coconut Prawns
1. Egg
1. Clove of Garlic
12. or so Prawns (for 2 people)
3 cups. Shredded Coconut
2 cups. Plain Flour
3 cups. Breadcrumbs
Oil for frying.
Peel the prawns so only the tail shell is intact and dredge them in flour.
Scramble the egg in a bowl, then crush the garlic into the egg mix.
Mix the Breadcrumbs and Coconut into a bowl.
Dunk each prawn into the egg mix, then the breadcrumb mix. (You can repeat this to give a thicker coating, but imo it absorbs too much oil with more than 1 coat)
Fill a deepdish frypan with oil and heat until at frying temp.
Fry the prawns in batches of 3-4 to insure the oil stays at optimum temp, remove when they are golden brown.
Serve with a "Nam Jim" thai sauce of: Lime juice, Palm sugar, Fish sauce, Chilli and coriander/cilantro.
Baby Spinach CousCous
Make CousCous as per instructions on pack. (always be conservative with the water, less is better than more)
Add crushed garlic with the boiling water.
Once cooked, stir baby spinach leaves through.sigpic

Stuffed Squid Tube with Bacon Wrapped Prawns
2. Squid Tubes (for 2 people)
10. Large Prawns
1/2 cup of Spring Onion
1/2 cup of Bread Crumbs
2 cloves of garlic, crushed
1/2 Onion, diced
1. Egg
Bacon Rashes
Paprika
Cumin
Mix the spring onion, bread crumbs, garlic, onion, egg, spices, and 4 of the prawns (chopped roughly), in a bowl.
Clean squid tube and stuff with stuffing mix.
Wrap Bacon around remaining prawns and secure with toothpick.
Fry tubes on a griddle pan/fry pan, turning each side, until slightly browned.
Place tubes and bacon prawns in hot oven and continue to cook for approximately 5 minutes (depending on thickness of tube).
Remove tubes, turn oven up to extra hot temp (around 230c) and continue to cook prawns until bacon is crispy. (This method makes the prawns a little dryer than frying, but much healthier)
Remove prawns from oven, and remove toothpicks from prawns.
Slice tubes into thick slices.

Beef Wellington
2 beef eye fillets (for 2 people)
12 oz baby bella mushrooms*
1 sheet of puff pastry, rolled out thin
1-2 TBS mustard
7-8 slices of prosciutto
1 egg, for sealing the puff pastry/glazing the top
salt/pepper, I prefer kosher salt
3-4 TBS oil, to sear the beef
Pre-heat the oven to 200c.
Heat some oil in a large pan and quickly fry the seasoned beef all over until it's brown. Remove and allow to cool.
Roughly chop the mushrooms and blend in a food processor to form a puree. Scrape the mixture into a hot, dry pan and allow the water to evaporate. When sufficiently dry (the mixture should be sticking together easily), set aside and cool.
Roll out a generous length of cling film, lay out the slices of prosciutto, each one slightly overlapping the last. With a pallet knife spread the mushroom mixture evenly over the prosciutto..
Place the beef fillet in the middle and keeping a tight hold of the cling film from the outside edge, neatly roll the prosciutto and mushrooms over the beef into a tight barrel shape. Twist the ends to secure the clingfilm. Refrigerate for 10 -15 minutes, this allows the Wellington to set and helps keep the shape.
Roll out the pastry quite thinly to a size which will cover your beef. Unwrap the meat from the cling film. Egg wash the edge of the pastry and place the beef in the middle. Roll up the pastry, cut any excess off the ends and fold neatly to the 'underside'. Turnover and egg wash over the top. Chill again to let the pastry cool, approximately 5 minutes. Egg wash again before baking at 200c for 35 - 40 minutes. Rest 8 -10 minutes before slicing.sigpic

Tom Yum Goong Soup
I freeze leftover prawn shells/heads to make stock for this soup. Alternatively you can use standard fish stock.
1. litre fish stock
2 cups (750ml) water
1 stalk of thinly sliced fresh lemon grass
4 cloves garlic, crushed
2 tablespoon thinly sliced fresh ginger
2 Thai red chillies, sliced thinly
500grams of Thai Rice Noodles
2 kaffir lime leaves, sliced thinly (or 2 teaspoons grated lime rind)
16+ large uncooked prawns
2 tablespoons fish sauce
Juice from 2 limes
4 green onions, sliced thinly
1/2 tablespoon of "Tom Yum Goong Paste" (available from the asian section of grocery store)
2 tablespoons coriander/cilantro leaves
2 tablespoons Thai basil leaves
4 Thai red chillies, seeded, sliced, extra
Place stock in a large saucepan with water, lemon grass, garlic, ginger, chillies and lime leaves. Bring to the boil then simmer, uncovered, for 10 minutes. Strain into a large jug or bowl. Return to pan and bring to the boil and add noodles.
Meanwhile, shell and devein the prawns, leaving tails. Add prawns, simmer until they change colour. Add sauce and juice, remove from heat.
Stir in the onions, coriander, basil and extra chillies.sigpic

1/2 cup sour cream
1/2 teaspoon dried chives
1/2 teaspoon dried parsley
1/2 teaspoon dried dill weed
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon salt
1/8 teaspoon ground black pepper
2-4 Jalapenos
1/8 teaspoon paprika
1/8 teaspoon cumin

It isn't anything fantastic by any means but its a really good fucking dip either way. Its really just homemade ranch dip with jalapenos.
Actually sorta stole the recipe from a local mexican restaurant called Chuy's, it got pretty popular and now lots of places carry it. I just sorta figured out the recipe and added a few things.Rabble Rabble Rabble
